Hey guys! I love matcha green tea so I decided to make my own green tea cupcakes! :) This is actually my first time making these cupcakes and I also made up the recipe by myself sooooo the cupcakes turned out to be a little bit too dry. However, I have made some changes to the recipe and below is the revised version:
Ingredients: (For 12 medium cupcakes)
1/ 1 1/4 cup of all-pupose flour/cake flour
2/ 3/4 cup or 1 stick of unsalted butter (soften)
3/ 1 cup of confectioners sugar
4/ 1 teaspoon of vanilla extract
5/ 1 tablespoon of matcha green tea powder + 1 teaspoon extra for frosting
6/ 1 teaspoon of baking soda/baking powder
7/ 1 cup/120ml of Milk (I used 2% reduced fat milk)
8/ 2 eggs
9/ Cream cheese/buttercream frosting or you can make your own frosting! :)
Let's get started!

1/ First, pre-heat the oven to 350F/180C. Prepare a bowl, a whisk, and a hand mixer (or a stand mixer if you have one) |

2/ First, put 1 cup of sugar in the bowl |
|
3/ Cut the soften butter into cubes and add to the sugar |
|
4/ Mix them up with a hand mixer at high speed |
|
5/ Add 2 eggs to the bowl and mix well at medium speed |
|
6/ Add 1 teaspoon of vanilla extract |
|
7/ Then add 1 cup of milk slowly into the bowl and mix |
|
8/ Shift 1 1/4 cup of flour, 1 pinch of salt, and 1 teaspoon of baking powder in and use a whisk to mix well at slow speed. After the flour has somewhat dissolve, go from slow speed to high speed. |

9/ Add 1 tablespoon of green tea powder and whisk gently |
|
10/ After the green tea powder has dissolved (somewhat), use a hand mixer at high speed to mix everything together |

Tah-dah! And this is the final mixtureeee! |

11/ Put the mixture evenly into muffin/cupcake pans and then bake them in the pre-heated oven for 18-22 minutes |

Now, we'll move on to make the green tea cream cheese frosting! I use this Betty Crocker Rich&Creamy Cream Cheese Frosting because I'm so bad at making icing/frosting! This one is really really yummy and tasty! :) |

I used half of the frosting canister and mix it with 1 teaspoon of matcha powder to get the smell and taste of green tea. |

Mix them well together then put the mixture into a small ziplock bag for decorating the cupcakes |

This is how my cupcakes turned out to be! :) I used a fork to test the cupcakes instead of a toothpick so they turned out really bad. That's why you need decoration! :) |

Use any decorating tips that you have and attach it to the ziplock bag. You can start decorating your cupcakes now! :) |

They taste awesome! Light-weighted, soft, and not too sweet. The only thing that doesn't satisfy me is that they are not moist and fluffy as expected; but other than that, everything else is totally fine! So, if you like green tea, give it a try! :)
